Ginger Ale

Did you play “Duck, Duck, Goose”? or were you lucky enough to be RIGHT and called it “Duck, Duck, Gray Duck”?

Drink from a bubbler? or water fountain?

Do you drink soda? or pop? or coke?

Regional vernacular dictates a lot of things, but over the past few years, I have tried very hard to stay away from soda. I just don’t need the extra sugar, calories, artificial sweeteners, or acid. But I do like sparkling water, seltzer water, gas water, fizzy water, soda water, or whatever you wish to call it.

I have a little friend on my counter. It looks like a penguin. And it makes sparkling water. See? The beak is the handle used to pump carbon dioxide into water, and its eyes are the release buttons for inserting a new canister.

Together, my penguin and I make a wonderful ginger ale. It is the perfect companion for Thai dishes, spicy food, homemade pizza, or if you happen to have a belly ache.

Peel and finely chop ginger. Boil it in water for 5 minutes, then allow it to steep for an hour, or so.

Strain the ginger out and discard.

Make simple syrup.

Combine the two, and store in refrigerator up to a week.

Fill glasses about halfway with the ginger syrup, and top off with sparkling water. Adjust according to personal taste. Serve with lime wedges.
