Farm Fresh Mayonnaise


  • Total Time: 5 minutes
  • Yield: 1 1/4 cups mayonnaise

Ingredients

  • 3 egg yolks
  • 2 Tbsp lemon juice (about 1/2 lemon)
  • 1/2 tsp coarse brown mustard
  • 1 cup olive oil
  • 1/4 tsp salt
  • 1 Tbsp water


Instructions

  1. In a wide mouth pint-sized canning jar combine egg yolks, lemon juice, and mustard
  2. Blend on low speed until smooth
  3. Slowly add the olive oil, blending on high speed until incorporated
  4. Season with salt
  5. Add water to desired consistency, blending until smooth and creamy
