Breakfast Sausage Patties

Description

Loaded with flavor, easy to make ahead, and tasty any time of the day


Ingredients

Scale

1# ground pork sausage

1 large clove garlic, minced

1 tsp rubbed sage

3/4 tsp salt

1/2 tsp black pepper

1/2 tsp fennel

1/2 tsp thyme

1/4 tsp marjoram

1/4 tsp red pepper flakes

1/4 tsp paprika

1/8 tsp ground cloves


Instructions

Grind the fennel and pepper flakes in a mortar with pestle, or spice grinder. Then combine with all the other spices. Mix into the pork with your hands, then form into small patties.

Cook in frying pan until they reach 150 degrees. Remove from pan to a plate lined with paper towels so it can rest and continue to cook.

Freeze leftovers separated with a strip of waxed paper. Then thaw and reheat in the microwave.

Notes

Small patties freeze easily after they are fried for a quick reheat.

Another option is to brown, drain, spread on a pan and freeze. Once frozen, scoop into freezer bags to use in omelettes.
