Buckwheat Buttermilk Pancakes – Gluten Free

Description

Forget waffles from the freezer section at the grocery store! These are SO much better – delicious, nutritious, and satisfying.


Ingredients

Scale
  • 3 cups buckwheat flour
  • 1 cup gluten free flour blend
  • 4 Tbsp sugar
  • 2 Tbsp ground flax and/or chia seeds
  • 3 tsp baking powder
  • 3 tsp baking soda
  • 1 1/2 tsp salt
  • 1 tsp cinnamon (optional)
  • 6 eggs
  • 4 cups buttermilk
  • 1 cup melted coconut oil

Instructions

  1. Stir together the dry ingredients, making sure there are no lumps
  2. Add room temperature eggs and buttermilk, stirring until combined
  3. Gradually stir in the coconut oil, and let stand for 10-15 minutes
  4. Cook in a hot waffle iron

Notes

Cool completely on a rack before freezing leftovers in ziploc-type bags. Perfect for toaster waffles!
