Buttermilk Waffles

Light, fluffy, crispy, and delicious gluten free waffles


Ingredients

Scale
  • 4 cups gluten free flour blend
  • 6 Tbsp sugar
  • 2 tsp baking soda
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 6 eggs
  • 1 quart buttermilk
  • 3/4 cup coconut oil, melted

Instructions

  1. Bring all ingredients to room temperature. In a large bowl, whisk together dry ingredients.
  2. Add eggs and buttermilk. Stir just until moistened (there will be lumps).
  3. Gently stir in melted oil.
  4. Bake in waffle iron or on a griddle as pancakes.

Notes

Cool waffles on racks, then freeze in bags, for toaster waffles.
