Caprese Chicken Thighs for Crockpot

Easy and fun to assemble. Perfect for weekday supper, but fancy enough for Sunday company


Ingredients

Scale
  • 8 boneless, skinless chicken thighs
  • 3 Tbsp olive oil
  • 2 tsp minced garlic
  • 1 cup basil cut in chiffonade
  • 6 ounces sun dried tomatoes, chopped
  • 1 package mozzarella pearls (2.5 ounce)
  • 2 tsp Italian seasoning
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Instructions

  1. In bottom of a crockpot, combine minced garlic and olive oil.
  2. Open chicken thighs so they lay flat. Season generously with salt and pepper. Divide sun dried tomatoes, basil, and mozzarella pearls between the 8 chicken thighs. Carefully place in the crockpot on top of the oil and garlic. Sprinkle with Italian seasoning.
  3. Cook on low 4-6 hours.

Notes

If you choose to use boneless, skinless chicken breasts, butterfly them to create an “open book”. Check them earlier than thighs, as breast meat can dry out if overcooked.
