Easy Quinoa


Ingredients

  • 1 cup quinoa – red, white, black, or mixed – well rinsed
  • 2 Tbsp olive oil
  • 3 cloves garlic, finely chopped
  • 2 cups chicken broth
  • 1 Tbsp butter

Instructions

  1. Thoroughly rinse quinoa in a mesh sieve with cold water
  2. In a saucepan, heat olive oil over medium heat
  3. Cook the garlic for 2 minutes
  4. Stir in the quinoa and toast for 2-3 minutes
  5. Add the chicken broth, bring to a boil, and simmer with the lid partially covering, for about 20 minutes
  6. Before serving, stir in the butter
