Garlic Scape Hummus


Ingredients

  • 1 pound garbanzo beans, soaked overnight (4 cups of these beans will be used for hummus, the rest for another tasty dish)
  • 1 tsp baking soda
  • 12 garlic scapes, seed pot removed
  • 1 small lemon, juiced
  • 1/2 tsp red pepper flakes
  • 1/2 cup olive oil
  • 1 tsp salt
  • 1/2 tsp pepper
  • 2 Tbsp water
  • Olive oil and paprika for serving

Instructions

  1. Soak beans overnight in a large bowl with water, then rinse and drain
  2. Cook beans with fresh water and baking soda in pressure cooker on high for 12 minutes
  3. Once cooled, peel beans by pinching off the membrane
  4. In food processor, combine garlic scapes, red pepper flakes, and lemon juice until finely chopped
  5. Add 2 cups of the beans and process until smooth, scraping down the sides of the bowl
  6. Add the remaining 2 cups of beans, processing until creamy
  7. Slowly drizzle in the olive oil, processing another minute or so
  8. Season with salt and pepper, and add water, then process one more time
  9. Serve drizzled with olive oil and sprinkled with paprika
