Hot Italian Sausage Soup

Description

Hot and spicy, and oh so tasty!


Ingredients

Scale
  • 1 large onion, chopped
  • 4 carrots, diced
  • 4 parsnips, peeled and diced
  • 1 pound package spicy/hot italian sausage links, split down the middle and cut into bit-sized pieces
  • 1 pound (or 2 1/2 cups) dry white/navy beans, soaked
  • 2 tsp Italian seasoning
  • 1 tsp hot sauce
  • 4 cups chicken broth
  • 1/2 to 1 cup white wine
  • 1 pint cherry tomatoes, halved
  • 2 large leaves kale, rinsed and stripped from tough stems and chopped

Instructions

  1. Pour boiling water over beans, and allow them to soak for an hour, or so.
  2. While the beans are soaking, prepare vegetables and sausage.
  3. Drain and rinse the beans.
  4. Put sausage, onion, carrots, parsnips, beans, italian seasoning, hot sauce, and chicken broth into the pressure cooker. Add white wine, up to 1 cup, so ingredients are just covered.
  5. Seal the pressure cooker, and set for 12 minuts on high.
  6. Release the steam. Stir in the kale and tomatoes.
  7. Set pressure cooker for 3 minutes on high. Allow steam to release naturally – about 15 minutes.
  8. Stir well, and serve.
