Krumkake – Rullrån

Description

Delicate and buttery Norwegian/Swedish treats to serve any time of the year


Ingredients

Scale
  • 8 eggs
  • 2 cups granulated sugar
  • 1 tsp freshly ground cardamom
  • 1 cup melted (and cooled) butter
  • 2 cups all purpose flour
  • 1/2 cup cornstarch

Instructions

  1. Beat eggs and sugar well – about 10 minutes – until thick, then add cardamom.
  2. Fold in cooled, melted butter.
  3. Sift together flour and cornstarch, then gently fold into egg mixture until well combined.
  4. Cover batter and chill overnight.
  5. Bake a tablespoon or so of batter on a hot krumkake iron until lightly browned, and immediately roll on wooden dowel. Allow to cool slightly before sliding the dowel out for the next krumkake.
  6. Nibbling is encouraged.
