Some times difficult situations bring wonderful surprises. After two heart surgeries within one week, friends and family showed up in droves to bless me with food, help with chores around the house and yard, rides here and there, and even more food. I love having so many friends who are excellent cooks!
One favorite meal was brought by the church-administrator-slash-friend. She brought it in the most simple form, and over the dozens of times I’ve made it since then, I have tried adding various vegetables. Loading the pressure cooker with root vegetables makes a hearty meal. However, I totally appreciate this quick, easy, low carb, and delicious dish.

There are several things to love about this stew:
- it is very low carb — great for those following a keto diet
- the stew is light — perfect for every season of the year
- the pressure cooker (or instapot) doesn’t heat up the house
- prep is quick — leave veggies in big pieces
- it is fast — cooks for only 2 minutes!
- it is SO tasty!
To top it off, this recipe has only 5 ingredients: kielbasa, cabbage, radishes, broth, and butter. Don’t let the word “radish” scare you off. When raw, radishes are peppery, crunchy, and commandeer your taste buds. When cooked, radishes are mild, yet flavorful. The carb load is MUCH less than potatoes, yet they add some nice nutrition.


Seriously. You do not want to waste time chopping veggies into small pieces, or they will cook into mush. The kielbasa is cut into chunks. Cabbage is wedged then halved. Radishes are cut in half if they are large.
Season lightly with black pepper before cooking. The kielbasa adds a lot of flavor, as does the butter. Hold off on the salt until you know if the dish truly needs it. Chicken bone broth is a great foundation to build on, and if you want to ramp up how special this simple dish is, use french onion soup.

Prep time is about 5 minutes. The pressure cooker / instapot takes a few minutes to heat up, then the cooking process is 2 minutes. Then it takes a few more minutes to release pressure, and dinner is served!

Kielbasa, Cabbage, and Radish Stew for Pressure Cooker

Ingredients
1 small head cabbage, cut into wedges and then in half
2 – 12oz kielbasa, cut into 1″ chunks
1 – 16oz package radishes, large ones halved
1 pint chicken bone broth
3 Tbsp butter
black pepper
Instructions
In the pot of a pressure cooker, layer cabbage wedges and radishes. Sprinkle with black pepper. Top with kielbasa and the pat of butter. Add the broth.
Close the pressure cooker, and set to high for 2 minutes.
Once pressure is released, stir, and adjust seasoning as desired.
Notes
Don’t skip the butter! It is important for the seasoning.
Swap in french onion soup for a richer flavor.
If you want a more substantial dish, add potatoes, sweet potatoes, carrots. But, this is surprisingly satisfying.
