Curry Spice Blend

Making spice blends at home allows you to adjust flavours to personal taste, saves money, eliminates any preservatives, and it’s fun!

This curry blend has become a favourite. Toasting the spices makes them more fragrant and have a rounder flavour. Use to make a wide variety of ethnic dishes, like chicken curry.

Description

Wonderful with chicken, veggies, in soups, and other fun creations


Ingredients

Scale
  • 3 Tbsp cumin
  • 2 Tbsp turmeric
  • 2 Tbsp coriander
  • 2 Tbsp ginger
  • 1 Tbsp fennel
  • 1 tsp mustard seeds
  • 1 tsp white pepper
  • 1 tsp cardamom
  • 13 tsp chili flakes or cayenne, depending on how much heat you like
  • 3 whole allspice
  • 3 whole cloves
  • 3 bay leaves
  • 1 small cinnamon stick

Instructions

  1. Place all ingredients in a dry frying pan over medium heat.
  2. Toast spices for 6-8 minutes, or until fragrant. Don’t allow them to scorch!
  3. Cool completely on a plate.
  4. Grind in a spice mill (or if you use a coffee mill, make sure it is very clean and completely dry)
  5. Store in airtight container.
