Hot Italian Sausage Soup

Some like it hot.

Some don’t.

But old movies — those are the best kind of entertainment for our family. We  have quite the list of favourites:

  • “In the Good Old Summertime” (a forerunner to You’ve Got Mail)
  • “Two Weeks with Love” (Dirty Dancing was loosely based on this)

And so on….

But I’ve honestly never seen “Some Like It Hot” with Marilyn Monroe, Tony Curtis, and Jack Lemmon. I would probably like it. Any movie that has the line… “I’m tired of getting the fuzzy end of the lollipop” must be good!

Anyway, back to food. . . . . . .

Some people like hot food. They can nibble away on ghost peppers while smiling.

Some people think a bowl of oatmeal is too spicy.

I’m right in the middle. I like lots of flavour, but don’t want smoke coming out of my ears when eating. This soup fits the bill perfectly. It is colourful (remember that you eat with your eyes first), and has a nice amount of heat, while providing massive amounts of protein, fiber, and veggies.

This soup is based on a recipe my sister sent to me, but altered to suit my demand for colour and flavour. Thanks, Ellen for the inspiration!

This uses white beans – called navy beans, NOT because of their colour, but because they were an inexpensive staple for the US Navy during the early 1900’s. Pour boiling water over the beans and allow them to sit for an hour. While they are soaking, peel and cut the vegetables and sausages. By the time you have finished pulling together the remaining ingredients, the beans will be ready to drain and rinse.

The easy part of this recipe is that no meat needs to be browned, and no fussing with fancy ingredients. Using Italian seasoning keeps the flavour high and the sodium intake low – no need to add any salt! Just put everything into the pressure cooker and be ready for the most incredible soup.

Hot Italian Sausage Soup

Description

Hot and spicy, and oh so tasty!


Ingredients

Scale
  • 1 large onion, chopped
  • 4 carrots, diced
  • 4 parsnips, peeled and diced
  • 1 pound package spicy/hot italian sausage links, split down the middle and cut into bit-sized pieces
  • 1 pound (or 2 1/2 cups) dry white/navy beans, soaked
  • 2 tsp Italian seasoning
  • 1 tsp hot sauce
  • 4 cups chicken broth
  • 1/2 to 1 cup white wine
  • 1 pint cherry tomatoes, halved
  • 2 large leaves kale, rinsed and stripped from tough stems and chopped

Instructions

  1. Pour boiling water over beans, and allow them to soak for an hour, or so.
  2. While the beans are soaking, prepare vegetables and sausage.
  3. Drain and rinse the beans.
  4. Put sausage, onion, carrots, parsnips, beans, italian seasoning, hot sauce, and chicken broth into the pressure cooker. Add white wine, up to 1 cup, so ingredients are just covered.
  5. Seal the pressure cooker, and set for 12 minuts on high.
  6. Release the steam. Stir in the kale and tomatoes.
  7. Set pressure cooker for 3 minutes on high. Allow steam to release naturally – about 15 minutes.
  8. Stir well, and serve.
