Crockpot Chicken Chili

Fall, winter, spring — we all need to eat. And some times we all need something easy and convenient. And we ALL need food that tastes good and satisfies.

As always in this blog, there are no ads and no pop-ups. (I get so annoyed when constantly having to close boxes in order to read a recipe.) These recipes are truly a labor of love, albeit an expensive one. 🥰

One difference is that, unlike many recipes on my blog, this one will not be accompanied by any stories. Simply an easy, delicious recipe. Enjoy!

Crockpot Chicken Chili

Crockpot comfort food


Ingredients

Scale

2 pounds chicken (approximately 4 breasts)

2 x 14 ounce cans diced tomatoes, drained

1 15 ounce can tomato sauce

2 cups chicken (bone) broth

2 onions, chopped

6 cloves garlic, minced

2 jalapeños, seeded and diced

2 x 15 ounce cans black beans, rinsed and drained

1 can corn, drained (or a small bag frozen corn)

3 Tbsp chili powder

1 Tbsp cumin

1 1/2 tsp salt

1 tsp black pepper

1 tsp oregano

1 tsp cilantro

Cheese for serving


Instructions

Layer ingredients in crockpot in the following order: onion, garlic, jalapeño, chicken breasts, salt, pepper, chili powder, oregano, cilantro, black beans, corn, diced tomatoes, tomato sauce, broth. Cover and cook on low for 7-8 hours, or high for 5 hours.

Before serving, shred chicken and stir chili. Top each bowl with a glob of goat cheese.

Notes

Shredded cheddar cheese can be used, but trust me, using a glob of GOAT CHEESE will change your chili life!
